    History & Heritage

    Founded in 1846 by Hector Henderson, Caol Ila (pronounced "cull-EE-la") means "Sound of Islay" in Scottish Gaelic, referring to the narrow strait between Islay and Jura that the distillery overlooks. This spectacular location provides some of the most dramatic views in Scottish whisky.

    Caol Ila is the largest distillery on Islay by production capacity, with six copper pot stills capable of producing over 6 million liters annually. Much of this production goes into Johnnie Walker blends, but the single malt has gained increasing recognition for its elegant, sophisticated style.

    The distillery was completely rebuilt in 1974, incorporating modern efficiency while maintaining traditional methods. Despite its industrial scale, Caol Ila produces whiskies of remarkable finesse, with a lighter peat character than its south coast neighbors.

    Production Process

    Malting & Mashing

    Lightly peated malt (35 ppm phenols) sourced from specialist maltings. Large-capacity copper mash tun with traditional design principles despite modern construction.

    Fermentation

    Eight large washbacks made from larch wood, fermenting for 55-75 hours depending on temperature and season. Consistent quality despite high volume production.

    Distillation

    Six identical copper pot stills arranged in pairs. Modern design with traditional proportions creates the characteristic light, elegant Caol Ila style.

    Maturation

    Maturation primarily in American bourbon barrels in large racked warehouses. The coastal location and sea air contribute to the whisky's maritime character.
